Underbar
The typical underbar features an enormous number of equipment items designed to facilitate beverage service.
Most are made from stainless steel. Manufacturers offer entire catalogs of underbar equipment and most are willing to customize or fabricate orders as needed.
The most common underbar equipment falls into one of several broad categories.
Refrigeration
- Underbar Refrigeration – Used to chill and store beer, wine, fruit, mixers, and garnishes.
- Underbar Ice Machines – Make and store ice behind the bar.
- Ice Bins and Wells – Designed for storing and serving ice that has already been made and transported from another location.
- Beer Chilling Bin – Insulated open top ice bin for chilling bottled beer and wine.
- Glass Chiller – Dedicated refrigeration unit that chills beer and martini glasses down to 0°F.
- Glass Froster – Uses liquid CO2 to deposit a layer of frost on beer and martini glasses.
- Cold Plates – Mounted in the bottom of an ice well, they chill liquid and syrup lines used for dispensing carbonated beverages.
Glasswashing
- Glass Washers – Automatic dish machines for washing glassware behind the bar. They come in various configurations. Both high and low temp models are available.
- Three-Compartment Bar Sinks – Designed for washing, rinsing, and sanitizing bar glasses by hand.
- Drainboards – Typically there are two. One for dirty glasses and one for clean glasses.
- Dump Sink – Used to dump ice and liquid from bussed glassware.
- Glass Rinser – High pressure sprayer to rinse residue from the inside of an inverted glass before washing.
Work Stations
- Speed Rails – Racks that hold rows of frequently used liquor bottles within easy reach of the bartender.
- Blender Station – Provides dedicated workspace for preparing blender drinks.
- Register/Coffee Stand – Provides dedicated workspace for cash register or coffee service.
- Trash Station – With a splash guard and a trash chute over top, it allows trash receptacles to be tucked away underneath and out of sight.
