Commercial Griddles
Griddles are a basic piece of cooking equipment found in most commercial cooking operations. Extremely versatile, they feature a flat smooth cooking surface and can be used to prepare a great variety of breakfast items, meats, vegetables, breads, and sandwiches.
Griddle Models
Commercial griddles come in standard, medium, and heavy duty models. Most units are designed to sit on a countertop or equipment stand. Drop-in units are also available. Some manufacturers incorporate griddle plates into their traditional range tops. Most all griddles include some type of grease collection tray and splash guards on three sides.
Gas or Electric Griddles
Gas griddles tend to heat up faster and respond more quickly to heat adjustments. Electric griddles are more portable because they are not connected to gas lines. They also tend to be more energy efficient, and depending on the menu, may not require a Type 1 ventilation hood for grease and smoke extraction.
Thick or Thin Plate
The cooking surface on a griddle is called a “griddle plate”. Griddle plates are typically made of cast iron, carbon steel, stainless steel, or a steel-aluminum composite. They come in different thicknesses. There are advantages and disadvantages to each.
